"food design XL" shows, how form, color, smell, texture, eating noises, production technology, history and stories influence the design of foods. More than one thousand times a year – before every meal – we cut, cook, stir and combine foods, thus deliberately modifying the edible offerings of nature. The human nature of designing food sets us apart from any other living creature. For thousands of years we all have therefore been food designers.

This book traces those parameters that distinguish food design. Our food is easy to produce, convenient to transport, matches the demands from consumers, fulfills several functions and, to top it all off, looks good.

Food Safety of Tomorrow
The documentary “Gammel adé - Lebensmittel ohne Verfallsdatum” (‘Good bye, mold! – Food without expiration date’) has been produced with the collaboration of the ttz Bremerhaven and asks the questions: do we already know enough about the effects irradiation as well as additives and dye stuffs really have on our food? And: which methods of preservation work in the consumer’s everyday life and which don’t?
