Food drying is one of the oldest methods of preserving food, taking advantage of the higher nutritional value compared to other preservation methods, simpler and cheaper storage, lower transport costs and their high convenience. Yet, food drying typically is a long and energy intensive project. New technologies are needed to significantly reduce drying time and save energy costs. The ULTRAVEG project has shown very promising results that have the potential to move the current state-of-the-art in food drying to a new level. This workshop will focus on how we can use these advances to develop better food-drying systems.
